The Concept.
Welcome to NOUJOUM, an intimate rooftop restaurant perched atop IZZA Marrakech. Named after the former home of iconic American socialite-designer BILL WILLIS, whose bold style inspires IZZA’s aesthetic, Noujoum means "stars" in Arabic. Here, unforgettable moments unfold beneath the enchanting Marrakech sky amid interlinked riad terraces, lush gardens, and panoramic views.
Our dishes and cocktails celebrate Moroccan traditions through locally sourced ingredients, supporting artisans and growers across the region. Reflecting IZZA’s ethos of heritage meets modernity, Noujoum provides traditional hospitality in a contemporary, art-filled setting, ideal for hotel guests and locals alike to share relaxed yet refined moments over food and music.

The Menu.
In our true HOUSE OF FRIENDS style, the menu consists of both small and sharing plates showcasing the very best Morocco has to offer. Traditional cooking methods combined with European influences and Mediterranean flair, as classic Maghreb recipes are given new life through modern techniques and global inspiration.
Our seasonal menus, curated by British consultant chef Paul Weaver and executed by Head Chef Ahmad El Hardoum, highlight local and sustainable produce. Ingredients are harvested nearby, from historic souks, organic farms, and our IZZA rooftop garden. Supporting local growers, artisans, and vineyards ensures the rich traditions of Morocco can be tasted in every bite and sip.

With every great menu comes a GREAT SERVE. Noujoum’s rooftop bar offers a curated selection of local wines, artisanal beers, and inventive cocktails crafted by our expert bartenders.
Start your evening with one of our signature cocktails, or sip a glass of Moroccan fine wine carefully matched to our dishes. As the sun sets and the call to prayer echoes across the city, the bar comes alive with a golden glow. Whether lounging on a plush banquette or mingling by the railing to soak in sweeping views, this is the perfect spot to UNWIND.
We also offer creative mocktails and a selection of specially crafted teas for those seeking non-alcoholic indulgence, each served with the same thoughtful presentation and attention to detail as our full bar offerings.

The Chefs.
AHMAD EL HARDOUM – HEAD CHEF
Ahmad’s PASSION for for combining cooking and the hotel industry goes all the way back to his childhood, where he worked with his brother in a small hotel in their hometown of Errachidia in eastern central Morocco. Over the past 15 years, he has refined his craft in Marrakech’s finest restaurants, blending deep Moroccan traditions with a global outlook and reimagining classic dishes through contemporary techniques and creative presentations.
Collaborating closely with consultant chef Paul Weaver, Ahmad sources fresh ingredients daily from local markets, farms, and fishermen. His warm presence brings a FAMILY FEEL to the Noujoum kitchen, where he mentors young chefs and delights in connecting personally with guests.

Supporting Ahmad is our talented Pastry Chef, Abderazzak El Boukhari, whose decade of experience ensures every dessert is as ARTFUL as the surroundings. His creations provide the perfect sweet finish, harmonizing beautifully with Noujoum’s culinary journey.

IZZA’s rooftop terrace is a lovely flower-framed stage for the bar and restaurant with tables beneath pergolas draped in vines… There are hot dishes including a very good eggs Royale with saffron and bowls of loubia (beans) with sun-dried tomatoes or merguez.

Highlights include legendary photographer SEBASTIÃO SALGADO’S breathtaking Amazônia series, with a vast array of his artworks bringing the serenity of the rainforest into our urban rooftop oasis. On your journey to the restaurant, you might find yourself eye to eye with one of LEILA ALAOUI’S poignant portraits from her Les Marocains series, or be mesmerised by YATREDA’S Ethiopian digital art that dances with life.

Noujoum sits atop IZZA Marrakech, our boutique riad hotel blending luxury, art, and Moroccan culture. Fourteen individually designed rooms, three tranquil courtyards, and two serene pools provide an INTIMATE RETREAT.

A young Bill Willis left home seeking his future, eventually settling in Marrakech where he forged a legendary career designing interiors for famous, creative, and entrepreneurial émigrés starting new lives here. A notorious BON VIVANT, Bill was the ultimate host. At IZZA, our bar celebrates both his magnetic charm and his famously hedonistic soirées.
This decadent space is inspired by one of Bill’s iconic projects: the reimagining of Rick’s Cafe in Casablanca. Hand-carved zellige and tadelakt walls sparkle with candlelit niches. Our expertly tended bar offers a myriad of local and international spirits, tonics, mixers, and beautifully crafted cocktails to revive the spirit and stir the soul.
Bill Willis was the original FREEDOM SEEKER. Step inside and let us pour you a taste of Marrakech's high-society secrets. To whet your appetite IZZA also produced a documentary capturing the essence of Bill’s life. Featuring interviews with personalities like Pierre Bergé, Marianne Faithfull, and Madison Cox, the film also provides glimpses of iconic locations like the private residence of Yves Saint Laurent, Zahia Palace, and Dar Noujoum itself.
